商店街の一角にあるこぢんまりとしたこの店は、食材にも料理自体にも随所にこだわりが感じられる地元の人気店だ。
無口なように見えて、実は饒舌なシェフが夫婦で営むこの店は、予約で貸し切り状態となっている事も珍しくない。
古き良さを大切にしながらも、変化を恐れず楽しむ。そんな料理への姿勢と堅苦しすぎない心地よい接客で、訪れた人を幸せで満たしてくれる。そんな場所だ。

It is a popular restaurant in the area.
The restaurant is run by a couple of chefs who appear to be quiet but are actually very talkative.
It is not unusual for the restaurant to be fully booked.
It is not uncommon for the restaurant to be booked out by reservation. With such an approach to cooking and a pleasant, not too formal, customer service, it is a place that fills visitors with happiness. It is such a place.

The following is an excerpt from “Minamata Dodo” planned and supervised by Minamata City.

BAMBOCHE(バンボッシュはフランス語で「たふく食べること」の意味。フレンチといっても堅苦しくなく、自宅のようにくつろいで食べて欲しい。そんな気持ちが、カジュアルで温かみのあるインテリアにも明るく気さくな夫人の接客にもあふれている。シェフは東京と水俣の名店で腕を磨いて独立。研究熱心で、日々新しいメニュー開発に余念がない。「お客もお料理も一期一会。その日の出会いを楽しんでいただきたい」と、旬の食材で作る絶品メニューが黒板にずらり。常連さんも「おすすめは来るたびにガラッと変わって、楽しいよ」。ワインをはじめ飲みものも充実。おいしい洋食を気軽に食べたい夜に絶好。

BAMBOCHE means “to eat a lot” in French. We want our customers to feel at home and not be too formal. This feeling is reflected in the casual and warm interior and the cheerful and friendly service of the chef’s wife. The chef honed his skills at famous restaurants in Tokyo and Minamata before going independent. He is passionate about research and is constantly developing new dishes. He says, “Every customer and every dish is a unique encounter. I want you to enjoy the encounter of the day,” he says, as he lists on the blackboard a variety of exquisite dishes prepared with seasonal ingredients. One of our regular customers says, “The recommendations change every time we come, it’s fun. There is also a wide selection of wine and other beverages.
