味心 松

水俣を訪れていた海外の人たちの、最初の食事処を「味心 松」と決めることに時間はかからなかった。そして、その選択が間違いでなかったことは、そこで不慣れなお箸を使いながらも、彼らの満面の笑みで食べる姿が語っていた。ランチメニューのカラッと丁寧に揚がった「天丼」も個人的におススメの一品。どのメニューも１つ１つが時間をかけて作られていて、とても美味しい。（by Minamata Impact)

It did not take long for the overseas visitors to Minamata to decide on “Ajigokoro Matsu” as their first place to eat. Seeing them eat with big smiles on their faces, despite using chopsticks they were not familiar with, I knew I had made the right choice. The crispy and carefully fried “Tendon” from the lunch menu is also one of my personal recommendations. Each dish on the menu takes time to prepare and is delicious.

The following is an excerpt from “Minamata Dodo” planned and supervised by Minamata City.

和食の料理人として熊本市で修業した主人は、ふぐ調理師の免許を持ち、鮨も握る本格派だ。地物にこだわって、魚は釣ったその場で〆たものを漁師から直接仕入れ。ランチでは、旬の鯵や太刀魚などを使った料理が大人気。昼来て感動し、夜もまた通う客も多いとか。「ある店の板前さんに勧められて食べたボラの塩焼きの味が忘れられず、小学校４年のときに料理人になると決めた」とい主人のていねいな仕事ぶりが光るメニューの数々。修業時代に出会った先輩の教えを守り、「夢は自分と同じような料理人を10 人育てること」と語る厳しくもやさしいまなざし。刺身、焼き物、揚げ物などなど、絶妙のタイミングで出てくる一皿に、時を忘れる味わい深い空間である。

The owner, who was trained as a Japanese chef in Kumamoto City, is a licensed fugu chef and also does sushi.The owner purchases fish directly from the fishermen, which are caught and closed on the spot.For lunch, the dishes using seasonal horse mackerel and swordfish are very popular. Many customers come here for lunch and are so impressed that they return for dinner. The owner of the restaurant says, “I was so impressed with the taste of grilled mullet recommended by the chef of a certain restaurant that I decided to become a chef when I was in the fourth grade of elementary school. Following the teachings of his seniors, whom he met during his training, he says, “My dream is to raise 10 chefs just like me. Sashimi, grilled dishes, fried dishes, etc., are all served at the perfect time, making this a place where you can forget about time.
